So far here in the Lehigh Valley we have dark skies and rain as people run to the store for last minute necessities and bring patio furniture and such indoors.

Crafting the night away

Moms don't get much free time typically. When you're a stay-at-home mom people seem to think you have all the time in the world but in all honestly you're constantly running around and even then the only 'free' time you have is at night after the kids are in bed.

My favorite 'free' time activity is crafting. I've sold on various online handmade shops and even in a brick & mortar shop in New Hope, PA at one point but with homeschooling the little man and freelance work my 'free' time vanished and my craft table became a pile of unfinished projects.

Now that my little man is going to be starting school I find myself with some upcoming 'me' time. I may put more hours into freelancing but I'll still gain 'me' time since I'll no longer have to plan out lessons and prepare supplies for each day's schooling. I'll miss it don't get me wrong and I hope the little guy learns just as much at school as he would at home. He'll socialize now with other kids which is great and hopefully meet some local friends. . .at the same time I hope he continues to be the sweet, well mannered, intelligent little boy that I've spent the last 5 1/2 years raising.

In anticipation of this 'me' time I decided to get an online shop set up yet again to peddle my wares so-to-speak. :)

My love of and growing interest in photography is allowing me to get some amazing new photos of my products and I even plan to sell prints. It will be a fun endeavor and I look forward to seeing how it goes.

Bittersweet Moments

My little man spent the first year of his life in daycare; actually, he attended from the time he was six weeks old until just after his first birthday. I worked there so it wasn't the typical situation. I still saw his first attempts as walking, saw him sleeping at naptime (which for a newborn was frequent), got to see him play with other babies, freaked at his numerous ear infections, panicked when another baby had ringworm and was still at the daycare, smiled when he had his first 'school' portrait and cried when he got bit on the head just before his baptism so he'd have that wonderful scab on his head for his pictures.

I can honestly say it was a rollercoaster and that didn't even include my own personal drama from being employed there.

Now, my time has come to cut the apron strings. I homeschooled him for preschool mostly out of necessity since our school district didn't offer a program and most area centers were expensive. Over the last year we followed an online school's program and my son thrivedI can't believe how much he learned and when kindergarten registration came last March he was able to do everything on the requirements list: count to 30, recite his phone number, name his colors, etc.

The homeschool program also has him doing addition, subtraction, reading, writing and we just started working with money. Yes, we're still finishing it up since we started late and it's a self paced program. Honestly until a few weeks ago I wasn't sure if we would continue the homeschool program or go to the traditional school down the road. We're going with the traditional way for now to see how he does. We're concerned that he covered more over the last year than his peers and may be bored next year but hopefully they keep him interested and active in class.

We got his backpack the other night and a few supplies. He was all excited to finally get to buy a backpack and he's been packing it daily with what he needs to bring to school. Note to self: check the pack his first day since apparently the television remote is one of his necessities for school. :)

Today I did some online shopping and got him a new wardrobe for back to school; pants, shorts, t-shirts, button downs and such. The thought of him looking nice everyday so other kids don't say anything is in the back of my mind. I went to Catholic school for most of my academic career so I didn't have to worry about what to wear. I've heard stories about kids getting made fun of or beaten up over their clothes which is ridiculous. Just another thing for me to stress as a Mom.

I worry about buillies since I don't have an aggressive little man. If someone takes a toy he's playing with at a playdate he'll ask them why they took it and then move on. Sometimes he'll come over to me and let me know if someone bonks him on the head with something or takes his toy. I tell him to let it go - things happen and as long as he's not seriously injured just move on and go away. What will happen in school if someone says or does something to him. Will he be popular? Will the other kids be decent? We live in a nice neighborhood but there are always 'a certain few' who make you wonder where they came from. Their behavior is awful and the parents don't see a problem with it.

So as my little man becomes a school-aged kiddo and goes off on his own for the day I hope that I taught him well. I hope he respects his teacher and other adults at the school, is a good friend to classmates, avoids the less desirable kids and keeps his love of learning...most of all I hope he has fun since he has many years of school ahead of him.

As for me - I just hope to hold back the tears those first few mornings and stay friendly with the other moms on the PTO for the next eight years. And in my mind he'll always be my little man. . .

DIY Baby Food (as seen on Patch.com)

Processed foods. They and have a list of ingredients that you can’t even pronounce half the time. Making your own baby food isn’t a new idea. My Mom had a hand grinder that she used for that purpose and of course technology has come into play now-a-days with fancy contraptions to grind, puree and store what my Mom made by hand and froze in an ice cube tray back in the dark ages for me.

When my son was born I started making his food but not to be healthy or save money. I started making it because I tasted his food and aside from some of the fruits and desserts I couldn’t stomach them.

Over time I realized that making his food did save money and I felt better knowing what he was actually eating. I still remember one of the popular makers of baby food being in the lime light because their apple juice was mostly sugar water. While I still bought juices for him at least I knew that his foods were all healthy and natural.

During Farmer’s Market season which is typically May through November, you can take advantage of local fruits and vegetables for this purpose. The Macungie Farmer’s Market runs Thursdays, Bethlehem has a Farmer’s Market on Tuesday’s at the Steelstacks, Emmaus’ Market is on Sunday’s and Allentown’s Farmer’s Market is year round and is open Thursdays through Saturdays. These are just a few of the area markets that you can check out for the freshest produce for your family. Of course you can also save time by picking up necessities at the grocery store. Wegmans gets some of their produce from local farms.

Remember to follow the Four Day Wait Rule when introducing anything new just in case there is a reaction. My little guy has an allergy to strawberries that took a few weeks to figure out but thankfully it’s very minor and he can still enjoy them as a healthy treat. The Dr. Sears website also recommends avoiding adding salt and sugar to baby’s food. They recommend trying a bit of lemon juice as both a preservative and a natural flavor enhancer.

When preparing baby’s food wash and cook the vegetables and fruits that need to be softened so that you can easily puree them. Babycenter.com recommends baking, boiling or steaming the produce until it’s soft and if you boil it save some of the leftover liquid to use when mashing to food.

Any grains can be ground in a food mill or food processor. I read on the Duggar’s website how their daughter-in-law Anna makes her own brown rice baby cereal by grinding rice, adding boiling water and cooking it for 10 minutes. Yet again, a healthy and less expensive alternative to what’s labeled as baby food and with as many babies as there are and have been in the Duggar family they not only know how to feed but how to save.

Whether you use a hand-turned food mill, baby food grinder, hand blender, food processor or a fork making your own baby food puts you in control of what your baby eats while saving a little on the wallet.

To say my little man and I enjoyed Pennsylvania Shakespeare's production of Shakespeare for Kids is a HUGE understatement.

I wondered how they would not only fit the entire story of Hamlet into 45 minutes but also perform it in a way so that kids as young as 5 would be interested. I knew within 5 minutes of sitting in my seat.

The four actors were so kid-friendly and animated. They did Shakespeare but threw in stuff kids knew like when they were talking about Ophellia not being allowed to talk to Hamlet (not even on Facebook) and they explained the Shakespearian words so that even a 5 year old understood.

Audience participation also kept everyone interested from the word of the show that required everyone to yell when it was said to having a member of the audience come up on stage to help the show along. There was singing and words were given out but the lyrics were simple enough that even those not yet reading all that much could follow along rather easily.

Time flew and before we knew it the show had ended. We were able to meet a few cast members and get autographs which was cool. No photos were permitted during the show so you'll have to go for yourself to see all the fun.

It's a wonderful experience for kids and a great way to introduce them to the Bard and one of his works.

Temps Rise and Leaves Wilt - Protecting your outside investment

All is not lost when temps rise and the garden is out in the elements. The sight of all those fruits and veggies wilting in the sun is painful but there are ways to help them hold on. . .

1. Water - It's an obvious one but every morning before the sun hits the garden and every evening when it's setting you need to give those plants a drink. You need to get them a drink before the ground is dry and the water just runs off - that doesn't do much good.You need to be sure plants will dry before night comes to eliminate the chance of any fungus developing - I water with diluted milk at night which supposedly helps eliminate this problem...but I also do it leaving plenty of time for the plants to dry before the sun completely sets. I pour the water right at the bottom of the plants where they need it most so it soaks in.

2. Mulch - You can buy hay and straw for this purpose or do what I do - grab those 'free' grass clippings. I actually did this when I transplanted my tomatoes and the darn things are doing great so far in this current heat wave. Okay, one is looking very sad but I believe that to be my fault as when I was hammering the garden stakes in I think I damaged its roots. I gave it an extra drink and it's fighting so we'll see but in general approximately 5 inches of something to help lock in moisture will do wonders. You still need to water more in these high temps but the mulch will help lesson the amount that evaporates.

3. Snip off those flowers - Basil forms those pretty white flowers and mint has purple. Sure, they're nice to look at but they also take energy away from the plant. Snip them and you'll have healthier plants. I always do this with my basil so I have more yummy basil rather than some basil topped with flowers.

4. Weeds - You normally pick the weeds out anyway but when the temps rise there's even more reason - they're stealing water from your fruits and veggies! Try to do this early morning or early evening when it isn't as hot, drink fluids, wear sunscreen and take breaks if it's an intense job. I try to weed almost daily so it's not a huge endeavor but when it's a 'hot one' out there I get a little more into it trying to get rid of anything that would steal a drop of that precious moisture from my plants.

5. Shade - IF you have the ability to put up a tarp or canopy to help shade your area go for it. Some plants like tomatoes can handle it better than say, cucumbers (speaking from personal experience). Just be sure to remove it when/if it does finally rain so they get a good drink. I'm also guessing you should at night so you're not trapping too much moisture as that may result in plant fungus growth.

Let's Cook ~ Cucumber Spinach Sandwiches

My garden is doing rather well this year and the cucumbers are amazing! I'm thankful that we'll be getting some rain tonight because they could use it (as can the 10 tomato plants out there).

I'm trying to come up with new ideas for the cucumbers rather than the usual cucumber salad that I normally make. You can freeze them - they get limp but if you're making the salad they work just fine.

This is an adaptation of a recipe I found a while ago. I added spinach because I had some in the garden. You could probably also add celery finely chopped for more crispness or even shredded carrots for color!

Ingredients:

12 ounces cream cheese
1/2 cup mayonnaise
1 medium cucumber, peeled, seeded and finely chopped
1/4 cup chopped spinach
1/2 teaspoon fresh dill weed
1/4 teaspoon garlic salt

Directions:

1. Once the cucumber is peeled, seeded and finely chopped, use a paper towel (or cloth towel) to soak up as much of the cucumber juice as possible.
2. Blend the cream cheese and mayonnaise in a food processor until smooth.
3. Using a spatula, combine cream cheese and mayonnaise mixture in the bowl with the cucumber.
4. Add the spinach, dill and garlic salt and mix well.
5. Allow the mixture to chill for at least an hour before making sandwiches.

You can use a mini party loaf bread to make finger food-type sandwiches or regular-sized pieces of bread for a summertime lunch. If you prefer, you can also leave the mixture in a bowl and serve it as a dip!

My Frugal Family Column

This week's column will be about reusing items around the house - namely plastic bags and newspapers. Let them eat eggs. . .

The incredible edible egg. The poor thing has gone from a breakfast staple to an avoided protein . . . or at least part of it. I love seeing people eat their scrambled eggs whites. How can they do it? They claim it's to help lower cholorestrol but honestly I'd just eat them less because I like to eat stuff that has flavor.

Happy news though - The latest research from the University of Alberta has found that egg yolks contain two powerful antioxidants that are thought to fight heart disease and cancer. The yolk actually contains more antioxidants than your typical apple! Hello healthy!

Past research has shown that the stomach and intestines convert egg protein into enzymes that act like ACE inhibitors to drop blood pressure. Eggs are also a rich source of carontenoids and lutein which are important for eye health.

Honestly I think as with anything - all good things in moderation.

Fun with Bread

I love reading Once a Month Mom. You get some great ideas on cooking and the idea of doing all your cooking for the month in just one day sounds like a great time saver. I've ever managed that BUT I do cook in bulk quite frequently and one of my favorite parts of this recipe is that you can make the dough and keep it in the fridge for up to two weeks! Fresh bread every night! And while it's not THAT difficult of a recipe it does save a little time which is always a Mom's BFF.

Artisan Bread in Five Minutes a Day
Ingredients:
3 cups warm water
1.5 tablespoons yeast
1.5 tablespoons kosher salt
6.5 cups all purpose, unbleached, unenriched flour

Directions:
In the large bowl, combine water, yeast, and salt. Stir together. No need to wait until yeast is bubbly. Add in flour all at once and stir together. All portions of the dough should be moistened so that no flour is left uncombined. Cover mixture with lid or plastic wrap and leave at room temperature for two hours, or until doubled in size. Place bowl of dough, still covered, in fridge overnight and up to 14 days.

How to make a loaf: Sprinkle pizza peel – or parchment paper, if you don’t own a peel – very generously with corn meal. You want to make sure your loaf doesn’t stick when you slide it off onto the pizza stone or cookie sheet. Remove bowl from refrigerator. Sprinkle a “cloak” of flour over the dough – you’re not trying to mix it in or make your dough less sticky. Cut off a grapefruit -sized piece of dough, and pull all four sides, one at a time, to the bottom to form a ball. Flour hands if dough is sticking to them. Don’t worry about making the bottom of the loaf look smooth.

Let loaf rest for 40 minutes (or more, if kitchen is drafty or cool). Most of the actual rising will take place in the oven. 20 minutes before baking, place pizza stone in oven on the second to bottom rack, and place broiler pan on the rack below that; preheat to 450. After 40 minutes have passed, sprinkle top of loaf with flour (to keep knife from sticking). Using a serrated knife, make two 1/4 inch cuts crosswise on the top of the loaf. Now, with a quick motion, flick the loaf onto the pizza stone, then pour a cup of hot water into the broiler pan. Shut oven as quickly as possible to retain steam. Bake for 30-40 minutes, or until crust is browned and hardened. Remove from oven and place on cooling rack; don’t slice in until cooled because it will release essential moisture moisture.

Freezing Directions:
You can freeze dough after first rise in portions, wrap in parchment and store in freezer bag. You can also freeze the loaf after baking in a freezer bag.

I reworked my website www.TheArtfulMommy.com in hopes of organizing my creativity and possibly (eventually) making an income from it. I'm not sure if my jewelry will finally sell or I'll start getting more into photography and photo shoots. I may dig out the easel and sell a few paintings - does it count that I gave a few to a friend who offered to buy them because I felt bad taking money for them?

Until I figure THAT part out - the website is started and getting situated.

Summer is on its way

The first few hints that Summer is on its way have popped up. Besides the tulips, Easter and daily thunderstorms we have the Grand Opening Weekend of Dorney Park & Wildwater Kingdom.

The first 2,000 guests will receive a Snoopy Bobblehead on Saturday when they open the doors at 10 a.m.

I'd go just for that reason to be honest.

Planet Snoopy is opening this season with new rides and thrills. Honestly I wish they offered a separate admission to just Dorney or even just Planet Snoopy. I hate having to pay almost $60 (admission for myself and my son and whatever parking may be) just for my son to splash in a wave pool and go on a few rides. I've been told that the way to go is to get a season pass so even if we only go for a few hours we make out in that we can go for a few hours every day so it could be worth it.

The park will be packed I'm sure with coasters full of screaming riders as they usher in the 2011 season. As for me, I'll be looking on ebay for my own Snoopy Bobblehead.

One Day Down and Already a Lesson Learned

So I survived the first day of being FaceBook free. Survived being an interesting descriptive considering going on FaceBook isn't a matter of life and death. I did learn a few things so far though:

1. Work doesn't stop. I freelance for SouthWhitehall.patch.com and Hellertown.patch.com and I recommend my stuff (and other pieces as well) on FaceBook. Well....that technically required me to login. I didn't actually go on and chat and such but I was logged in.Does that mean I already 'blew it' on Day 1? I hope not because I plan to continue to recommend things and since I'm not actually on my page I 'think' it's okay.

2. I'm not the only one doing this! I heard on the news about some local college students also giving up FB for Lent and it was suggested it was more difficult than chocolate. Yep...usually I get bored longing for my cocoa treat and move on to MaryJanes or whatnot but with FB . . .it's like cutting off a form of communication.

3. I've gotten stuff done! I did a bit of shopping at Target and got a new table, lamp and ottoman and have plans for doing a bit of redecorating in my newly found 'free' time. I also am in the middle of doing a major Spring cleaning of the kitchen that includes moving stuff around. Maybe I'll paint at some point too.

The social network Facebook has taken a beating this week by researchers who published studies finding it can hurt everything from your marriage to your health. Is it time to unfriend and unplug? I'm not so sure. Let's take a closer look.

Facebook leads to 1 in 5 divorces?

That's the finding of a survey done by the American Academy of Matrimonial Lawyers. Case closed? Not really.

Already stressed marriages were most vulnerable, which leads one to believe Facebook isn't causing divorce. It's just facilitating it. When spouses want to cheat, they now have Facebook – along with singles bars, Craigslist, and many other options — to use to troll for dates.

Researchers found that stress levels went up with the number of friends folks had on the site. One in 10 users said they felt anxious while on Facebook. What the research didn't show, however, is that many people use Facebook as a business, promotional and networking tool. It could be that stress-prone people tend to friend more folks — creating their own vicious stress cycle.

Facebook leads to eating disorders?

An Israeli study found that the more time teen girls spent on Facebook, the lower their body image and the higher their risk for developing eating disorders such as extreme dieting or anorexia.

As it turns out, it's not the social network itself but the fashion images that may really be triggering the poor body image in young girls. Other research has found that Facebook can actually boost self esteem, because of the social support.

Don't get me wrong. I'm not suggesting that the site is harmless, just that there are other interpretations for this research. Whether the site helps or hurts your health and your marriage largely depends on how you use it.

In my last post, I wrote about various studies that have linked the social network Facebook with an increased risk of divorce, eating disorders and stress. What follows are some tips that I hope will help you to use social media wisely and without ruining your health in the process.

1. If you are married, de-friend anyone who gets too flirty. I don’t even give folks like this a second chance. If they message me a comment that I know—without a doubt—they would never have the courage to say in front of my husband, they are no longer connected to me socially.

2. Compliment your spouse. Use your status update and other features to brag on your spouse publicly. Do not use these features to complain about your spouse. Complain about your spouse to your spouse’s face. Compliment your spouse to his face and behind his back.

3. If you are feeling depressed, unplug. Many people tell me that their mood starts to drop as they use Facebook and other digital media. If this starts to happen, step away from the computer and plug into real life. As a general rule, if you find yourself constantly refreshing the screen and feeler more and more down when more messages don't appear, you need to get away from the computer.

4. Set a timer. Give yourself 10 to 15 minute segments during which you are on Facebook. When the timer goes off, unplug from the social network and plug into real life.

5. When you are talking to a real live person, don’t pull out your phone and start answering tweets on Twitter. It’s just rude and who knows what the person in real life is apt to do to you if you pull something like that.

After giving it some thought I came to the conclusion that I agree with how 'bad' FB can be. The time I've spent online could have been used to get more productive things done: spending time with the family, reading a book, playing a game with my son, going to the library, calling a friend on the phone, etc. What will I accomplish if I give up FB for Lent. It's not THAT horrid a task since technically Lent does NOT include Sundays so I do have one day a week to get my updates and check-in with people. I still have email and my phone for messages, texts and calls so why is it such a scary thought to unplug myself from the online world of FB.

I already have fabrics all over the dining room table anticipating being cut into squares to be sewn into a quilt. I have a trip to the local market planned to get supplies so I can do some baking and I have a calendar waiting to be filled with purposeful events. It will be difficult to not hop online first thing in morning to see what everyone's up to and no, I'm not logging back into MySpace either.

Will I make it? I hope so. Will I miss it? Most likely. Will it be worth it? YES.

Get out and enjoy some sunshine!

The thought of temps above freezing is amazing and will be a reality as highs in the 50's and possibly 60's is in our future. What a thought - jacket weather!

Hopefully this snow will melt and dry things up a bit because the only thing worse than kids cooped up in the house due to the extremely cold temps that don't allow kids to enjoy the snow is warmer weather where they can enjoy the great outdoors only to be playing in a yard full of mud.

The recent number of snow days has led to many Moms on the verge of insanity. Some of us who home school are used to having the kids home all day but for some - it's like Summer only the great play land of the great outdoors is out of service.

The Agri-Plex at the Allentown Fairgrounds is hosting some big fun for the entire family this weekend, Jan. 22 and 23!

The Kid's Fun Fair and Traveling Zoo ( commerfordzoo.com) advertises both camel and pony rides as well as over 125 other animals! A unicow even! AND a 100lb. rat!

There's also a midway with 'more rides than ever'.

The fun has already begun - open Saturday (today) 10 a.m. - 7 p.m. and again on Sunday 10 a.m. - 6 p.m.

Admission for this is $10 for adults and $7.99 for children 12 and under. Free children's coupons are available at area business as well as at the front box office during the event.

Let's Cook ~ Pancakes from scratch

While making pancakes from box mix is easy so it making them from scratch. Most people probably already have the ingredients in their pantry.

I found this recipe on allrecipes.com but changed it a bit. I added less baking powder (originally called for 3 1/2 tsp), less salt (originally called for 1 tsp), more sugar (originally called for 1 tbs), and added vanilla - 2 tsp.

Ingredients

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 tablespoon white sugar
2 teaspoons vanilla extract
1 1/4 cups milk
1 egg
3 tablespoons unsalted butter, melted

Directions

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

I added chocolate chips to some as well since the little dude LOVES his chocolate chip pancakes. The result - fluffy and yummy homemade pancakes.

Snow Day Blues?

Don't fear - there's fun to be had once the car is cleared off!!

PaintSome Pottery in the Tilghman Square Shopping center is open today from 1 - 8 p.m.
Go paint a cocoa mug!

The Da Vinci Science center opened at their normal time - 9:30 a.m. for some education fun!

Go sledding!!! Pack everyone in the car and head to the hills!!

And then, once you get home and in from the cold make some hot cocoa with marshmallows and play a game with the family.

It's A SNOW DAY!

What to do on a snow day! The obvious shoveling and clearing off vehicles. Perhaps a snowball fight and some snow angels. If you're lucky with some hills you can do a little sledding even, but then what?

Well, before all that fun stuff save some snow for a snack!

What?

Yes!

Every time it snows my little guy and I LOVE to make snow ice cream. I even got the husband to try it and he admitted that it actually tasted good. Amazing but true!

Snow Ice Cream

You need:

~ a huge bowl of snow (aprox 10 cups) preferably collected

in a metal bowl that's been chilled so the snow doesn't

melt too quickly (stay away from any snow other than the

pure white stuff obviously)

~ 1 cup of sugar

~ 1 tsp vanilla

~ 1 cup milk

1. Make sure the milk is very cold - I normally put it in

the freezer ahead of time (it helps keep the snow from

melting too quickly)

2. Collect your snow (as mentioned I chill a metal bowl

ahead of time)

3. Mix the snow, sugar, vanilla and chilled milk

4. Enjoy!


You can also add a little chocolate or strawberry syrup!

Add peppermint extract and chocolate chips! Have some

flavored gelatin mix? Why not? Have fun!

Snow also makes awesome soda or juice slurpees!

Growing up in the city of Philadelphia has many benefits: Tastykakes, soft pretzels, Geno's, Pat's, and Jim's Steaks and on New Year's Day - The Mummer's Parade.
While some just don't 'get' it a good number of people do. . .thankfully. For me - there's no better way to start the year off.

Pictures don't do the event justice but here are a few to clue you in on what you missed if you were not there.

While watching on TV is great. . .it's not the same. And for those in the 'know'...you don't watch in Center City...you head to 2 Street, not 2nd Street...TWO Street. It's a few blocks away from Delaware Avenue. And no, not Columbus Boulevard... Delaware Avenue. Don't be such a tourist ;)

Happy New Year 2011 to one and all!!!

After having the kids home on break for the last week or so, you may be at your wits end and need to get them out of the house.

What to do? Start the year on a crafty note and head to one of my favorite places - PaintSome Pottery in the Tilghman Square Shopping Center (4610 Broadway, Allentown, PA 18104).

They're open 10 a.m. - 5 p.m.on Saturday and noon to 5 p.m. on Sunday so get out for a bit and keep those little hands busy!

The holiday weekend has arrived, and many people will be heading to Christmas Eve and Christmas Day services, or to homes to celebrate with family and friends. Here are some other ideas to keep the weekend full of fun.
1. Head to the movies with the family. Tangled, Yogi Bear, Tron: Legacy and The Chronicles of Narnia: The Voyage of the Dawn Treader are all playing at the AMC Tilghman Square 8 Theatre on Friday, Saturday and Sunday.

2. Build a gumdrop house at The Da Vinci Center's brand-new Winter Candyland. Colorful characters lead visitors through fun-filled experiences like tasting candy 'glass' with Golly Jolly, creating a puppet show with the Candyland characters and helping Frosty Fluff blow-up and mash-up Marshmallow Peeps. Candyland activities are included with paid Da Vinci Science Center admission. It is open on Sunday, Dec. 26, from 1-3 p.m.

3. Visit the Lehigh Valley's premier Transportation Museum, America on Wheels. On Sunday, Dec. 26, from 12-5 p.m. their Train Time Charity Holiday Exhibit will be open. Admission price is $9 for adults, $6 for seniors and students age 13-16 and children 12 and under are free.

4. Let the kids bounce out some pent up energy at the "Holiday All-Ages Open Bounce" at Bounce U Allentown on Sunday, Dec. 26. There will be two sessions: 12:30-2 p.m. and 2:30-4 p.m. It's $9.95/child and adults are free with each paid child. Reservations are suggested so call 610-841-7088 to reserve your spot.

It's Christmas Eve and you know what that means - the last minute rush to shop, wrap and bake. One of my most favorite cookies are Lemon Angel Wings. They're almost like candy in that they're coated in sugar before they're baked so it caramelizes while baking and then hardens like a nice thin sweet and sugary shell. YUM.

They're not difficult to make either! I found the recipe on Taste of Home a few years back and they're a tradition now - Santa LOVES them. ;)

Note: I'm stealing the photo from Taste of Home until I upload my own later today. I'm also making chocolate covered marshmallows and possibly Hungarian Angel Wing Cookies that have rum in them and are fried! How's that for a happy holiday combination?!

Lemon Zest Angel Wing Cookies

Ingredients:

1-1/2 cups all-purpose flour
1 cup cold butter, cubed
1/2 cup sour cream
1 teaspoon grated lemon peel
10 tablespoons sugar, divided

Directions

Place flour in a large bowl; cut in butter until crumbly. Stir in sour cream and lemon peel until well blended. Place on a piece of waxed paper; shape into a 4-1/2-in. square. Wrap in plastic wrap and refrigerate for at least 2 hours.
Cut dough into four 2-1/4-in. squares. Place one square on a piece of waxed paper sprinkled with 2 tablespoons sugar. Cover with another piece of waxed paper. Keep remaining squares refrigerated. Roll out dough into a 12-in. x 5-in. rectangle, turning often to coat both sides with sugar.
Lightly mark center of 12-in. side. Starting with a short side, roll up jelly-roll style to the center mark, peeling paper away while rolling. Repeat rolling from other short side, so the two rolls meet in the center and resemble a scroll.
Wrap in plastic wrap and refrigerate. Repeat with remaining squares, using 2 tablespoons sugar for each. Chill for 1 hour.
Unwrap dough and cut into 1/2-in. slices; dip each side in remaining sugar. Place 2 in. apart on foil-lined baking sheets. Bake at 375° for 14 minutes or until golden brown. Turn cookies over; bake 5 minutes longer. Remove to wire racks to cool. Yield: 3 dozen.

Nutrition Facts: 1 serving (1 each) equals 84 calories, 6 g fat (4 g saturated fat), 16 mg cholesterol, 53 mg sodium, 8 g carbohydrate, trace fiber, 1 g protein.

Let's Cook ~ Mexican Wedding Cookies

First of all an apology. I'm sure there is a more PC name for these cookies but I have no idea what that may be. Everything from my favorite Girl Scout Cookie to a holiday event in Philly seems to have undergone a PC renaming over the years. My Aunt used to make these cookies (20+) years ago and the recipe book I found with them is even older so please forgive my 'unPC' cookie but they are tasty so keep that in mind. They're also not exactly 'healthy' as you'll see when you look at the recipe. Again, the recipe comes from a Women's Day Christmas Crafts & Food book from the early 1970's when people smoked at work and fondue was fun. It was a different time.

Mexican Wedding Cookies

1 cup butter or margarine, softened
Confectioners' Sugar (as specified)
1 tsp. vanilla
1/4 tsp. salt
2 cups flour

Preheat oven to 375 degrees.

In a medium bowl, cream butter, 1/2 cup confectioners' sugar, vanilla and salt until fluffy. Stir in flour until well blended and then chill 30 minutes or until firm enough to handle.

Shape into 1" balls and place 1" apart on an un-greased cookie sheet; bake 12-15 minutes or until lightly golden. Remove to rack set over waxed paper and dust heavily with confectioners' sugar; cool.

Store in an airtight container in a cool, dry place. Dust with additional confectioners' sugar before serving.

* I personally cut the salt to just under 1/4 tsp. and used unsalted butter. I only cooked them 12 minutes rotating the cookie sheet halfway through because sometimes my oven doesn't seem to heat evenly. I also let my dough chill for over an hour and it was hard as a rock. It wasn't a big deal - I just let it sit out until it was more the consistency of play dough. These are actually really easy to make, yummy and if you don't pay attention to the ingredients you can enjoy them guilt free. :)

So it has been an amazing few months between starting this blog and actually acquiring a 'job' writing. Run Santa Run

Greenawalds Fire Company will have someone special returning to their crew for one evening only. On Saturday, Dec 18 Santa Claus will be riding along with them for their annual Greenawalds Santa Run.

Mr. Claus will personally makes the rounds dropping off gifts to all of the good boys and girls in South Whitehall Township.

If you would like to have him visit your home for a certainly little one you can drop off a present for them at the fire station on Tuesday, Dec 14 or Wednesday, Dec 15 between the hours of 5:00pm and 9:00pm each evening.

Santa is scheduled to deliver presents anytime between 1:00pm and 9:00pm. If you need to make special arrangements and/or request a certain delivery time they'll meet it to the best of their ability.

While the weather outside is a little frightful you may need some indoor activities for the family. A great one for this time of year making cinnamon applesauce ornaments.

Cinnamon ornaments are an easy, inexpensive and fun idea and they look great on your tree or can be used to decorate holiday packages!

Simply mix ¾ cup applesauce and a bottle of ground cinnamon (4.12 oz) until you have a smooth dough.

Roll the dough ¼” thick and dig out those holiday cookie cutters. You can use a straw to make a hole in the tops of them to later thread a piece of ribbon through for hanging.

Bake for 2 ½ hours at 200 degrees and then cool on a wire rack (or let them dry at room temperature for 1 – 2 days until thoroughly dry, turning occasionally).

Decorate with paints, glitter, ribbon or whatever fun materials you have in your craft closet or leave them as is.

Fun for all ages and you will have some yummy smelling decorations that will last for years.

Breakfast with Santa at The Crayola Factory

Tired of the same old breakfast? If so, head to The Crayola Factory next month for their special weekend event - Breakfast with Santa.

Saturday the 4th, 11th and 18th the breakfast will take place from 9:00am - 10:00am. Sunday the 12th and 19th breakfast will be from 11:30am - 12:30pm. There will be no breakfast on the 5th.

Children can visit with the big guy himself while enjoying a hot breakfast of pancakes, scrambled eggs, bacon, sausage, home fries and pastries as well as juice. Coffee and tea will also be provided.

There will be holiday music and each child will receive a Crayola gift valued at $20.00.

The fee for the breakfast is $20 per person and half price admission tickets to The Crayola Factory will be available to those attending the breakfast.

If you took advantage of the Kids Bowl Free program over the Summer you'll be delighted to know that you may find coupons in your KBF account to be used for the Thanksgiving weekend!

Kids Bowl Free is a program is designed by bowling centers to give back to the community and provide a safe, secure, and fun way for kids to spend time over the summer. A surprise email last week informed members that there 'may' be coupons for the upcoming Thanksgiving holiday and sure enough - they worked their magic - one free game of bowling each day: November 25th - 28th. They do suggest you call ahead to make sure there are available lanes but what a great idea to get the kids out of the house!

Their summer programs gives kids 2 games each day. They also offer a family pass that's only $24.95 and includes 2 games per person per day. You can have up to 4 people on the pass! Take the entire family bowling and only pay for shoe rentals!!

It's great for over the Summer when you're not sure what to do with the family and now it's also an option over the holiday weekend. Happy Thanksgiving! STRIKE!

Don't sit still this Winter - get active!

The Parks and Recreation Board of South Whitehall Township is offering a Winter Swim and Gym Program! Don't let the Winter blues bring you down or lead to a family of couch potatoes over the next few months - get out and get active!

While there are no exact dates at the moment, there is an impressive list of events planned to keep the entire family fit and happy over those cold days soon to arrive. The program is for family recreation only and just for fun so get the crew together boycott the television for an evening.

What's on the schedule? At Parkland High school from 1:00pm - 5:00pm there will be family swimming on Sunday afternoons. Children 12 and under must be accompanied by an adult who is at least 18 years of age and there is no fee! The shallow end is perfect for non-swimmers.

Parkland High School is also offering an open gym. Kids 15 years of age and under (who are joined by their parents) can shoot baskets and play pick up games. No team games or practices are permitted. More details to come!

The South Whitehall Township recreation programs for adults (18 years of age and older) require registration in advance at the Permit Officer in the Municipal Building located at 4444 Walbert Avenue and there are fees.

On the agenda for this Fall/Winter: beginning ballroom dance at the Covered Bridge Recreation Building on Thursday Evenings from 6:30pm - 7:30pm. The fee for this is $60.00/couple and it is 8 weeks long (8 classes). You'll learn the foxtrot, waltz, east coast swing and of course the polka. You do need to bring along a partner and while they don't promise you'll find yourself on Dancing with the Stars you will have a fun time.

Beginning Latin Dance will be on Thursday evenings as well at the Covered Bridge Recreation Building from 7:30pm - 8:30pm. The fee is again $60.00/person and is 8 weeks long (8 classes). You don't need a partner so get yourself out of the house and learn the samba, cha cha, merengue and east coast swing. It's great exercise and a fun way to spend the evening with friends.

If you're looking to relax try Yoga. On Tuesday evenings from 7:00pm - 8:30pm at the Covered Bridge Recreation Building you can re-energize yourself, tone your body, increase flexibility all while relieving stress. They have mats available if you do not have your own and the fee is just $28.00/person for 8 classes.

Let's Cook ~ Bruschetta

Another delish recipe find at epicurious.com - Tomato, Red Onion and Basil Bruschetta. I love bruschetta and always order it when I'm out and in the mood for something fresh. I love the tomatoes and onions and especially the garlic and it's a great thing to make when you have a garden and find yourself with a basket full of tomatoes which I ALWAYS do. I only had one tomato plant this Summer and still have a dozen tomatoes in the fridge. I admit, it's a money saver but the irony is that I don't really like tomatoes so I have to find other ways to enjoy them aside from in salads.

One of my favorite ways to use bruschetta is as a topping for chicken. After cooking chicken breasts in a frying pan you add freshly made bruschetta and let it simmer on low. I usually only let it go about 5 minutes (while I cut/broil the baguettes). Sprinkle a little Parmesan Cheese on top and it's a yummy dinner with lots of yummy veggies. The point is to just warm the bruschetta and not COOK it unless you don't mind it cold on top which being a Mom it usually is by the time I sit down to eat it.

Tuesdays at Perkins with Kids - Perfect Together

As a stay-at-home mom I get a ltitle stir-crazy at times and need OUT! I especially feel this way when my husband works middle shift so it's only the kiddo and myself for dinner. I can't justify going out to eat since sometimes his appetite seems to get left at home nor do I like cooking for us because I always make too much and it's just boring. What do I like? (really I'm not that difficult)

I LOVE going to Perkins. The local Perkins Restaurant located at 3214 Hamilton Blvd. Allentown, PA 18103 has kids night on Tuesdays and Thursdays. Thursdays are character nights but if you go on a Tuesday as I have...we're usually the only ones there with a kiddo! It's a quiet night out and the kids eat free and I don't have to worry about dishes or hearing, "but I really wanted chicken and french fries" after putting meatloaf in the oven.

Another nifty thing about Perkins Restaurant is their Kids Birthday Club. Kids sign up and get an email for a free kids meal the week of their birthday! The website keeps track of how long before their birthday when they log in and there are even a few games and such to occupy them!

So next time it's a Tuesday or Thursday and you're not in the mood to cook head to Perkins...and don't forget to get a crazy cookie for dessert!

Let's Cook ~ Cider Glazed Apple Muffins

Nothing says 'Fall' like apple muffins!

It's always 'interesting' to try a new recipe; especially before a play date and you're hoping that it turns out edible so you don't have to stop along the way to buy something. We had a play date at the park earlier this week and with the weather so nice it was the perfect way to spend an afternoon with friends. Being a snack play date I debated what to bring and raided the kitchen cabinet and pantry only to find a box of brownie mix. I did grocery shopping and picked up the usual stuff as well as sugar since it's the best time of year to bake and still wasn't sure what to make so I looked in the fridge and there they were - what was left from an apple picking adventure. I went to my favorite recipe site (epicurious.com) and found the answer to my snack woes - Cider Glazed Apple Muffins.

The reviews were mixed from saying they were awesome to making a few changes to that they were too dry. I went with the original recipe so I could have my own opinion and I have to say after trying one - they're yummy. The muffins themselves may be better with the apples shredded rather than chopped since the muffins are small and the larger pieces could be a bit much and the glaze DOES take a bit so you should start it before getting the muffins going.

I made two batches since they were so simple and having run out of cider for the second batch I used a tablespoon of apple butter that I happened to have on hand as well as a tablespoon of water to equal things out. They have more of an apple flavor and the apple butter did work rather well, though you do need the cider or juice for glaze. Another change I made since I didn't have real cider on hand...I used my own homemade apple juice. It does have cinnamon/nutmeg seasoning in it so it worked rather well. And since this was a play date and thus the muffins were being shared - NO NUTS! I never realized how many people have nut allergies so this way no worries!

Give them a try and see what you think but over all we give them 4 Happy Bellies!

A veteran (from Latin vetus, meaning "old") is a person who has had long service or experience in a particular occupation or field; " A veteran of ..." . This page refers to military veterans, i.e., a person who has or is serving in the armed forces, and has direct exposure to acts of military conflict, commonly known as war veterans (although not all military conflicts, or areas in which armed combat takes place, are necessarily referred to as "wars").

When you stop to think about how much military veterans have done for us you almost feel guilty that you only recognize them on one day. While they may receive special treatment as far as discounts and such, does that really thank them for risking their lives for their country? This Veteran's Day thank a veteran. Fly your flag and wear that shirt you only wear on the 4th of July or Memorial Day. Remember those who lost someone or have someone overseas fighting now while their family waits for their safe return. I'm fond of a bumper sticker I read once, "I support the troops, not the war". I don't understand the whole situation overseas at the moment and why it's gone on so long with so many lives lost and promises of an end only to have more soldiers shipped over. I do understand that those fighting over there need our support and those who have fought do as well.

There are quite a few events around the area to celebrate Veteran's Day so get out as a family and show your support and gratitude this year if you can. The following is a partial list is from The Express Times.

NORTHAMPTON COUNTY

The Easton Area Public Library, 515 Church St., Easton, will host a free talk at noon Wednesday. Guest speaker will be Robert Faro, a local veteran and father who will discuss his son, Pfc. American Legion Post 397 of Hellertown will hold a ceremony rain or shine at 10:30 a.m. Thursday at Union Cemetery, 89 Main St., Hellertown.

The Steelworkers Veterans Memorial Committee will hold a ceremony at 10 a.m. Thursday at the memorial, Third and Filmore streets, Bethlehem. Retired U.S. Army Captain David A. Christian, a highly decorated Vietnam War veteran, will be the keynote speaker. Information: 610-360-7896.

Traditions of Hanover, 5300 Northgate Drive, Hanover Township, will hold a veterans recognition breakfast 7:30-9 a.m., Thursday. No cost for veterans; $5 for others. Guest speaker will be Maj. The Thomas Paine Chapter of Veterans For Peace will hold a commemoration 7:30 a.m. to 5:30 p.m.

Thursday at the Bethlehem Rose Garden, Eighth Avenue and Union Boulevard, Bethlehem. One tombstone for every Pennsylvania military member killed in Iraq and Afghanistan since 2003 will be displayed. Also a bell will be rung at the 11th minute of the 11th hour as a reminder of the original meaning of Armistice Day. Information: 484-248-6113.

Bethany United Church of Christ, Fifth Avenue and W. Market Street, will honor servicemen with a Pennsylvania Dutch meal 4:30-6:30 p.m. Saturday. It's beginning to look a lot like Christmas. . .

Growing up I always thought that each holiday has its own month. I knew February would be full of hearts and March full of shamrocks and then October full of pumpkins and ghosts but now November isn't just scarecrows and turkeys - Santa arrives as well.

I've nothing against the holiday season and love Christmas but when you read that Santa's arriving at the local mall the first week of November you (or at least I) can't help but have a puzzled look on my face. I love Santa and taking my son to see him and up until a few years back I had nothing against visiting the guy and telling him my Christmas wishes but the first week of November? Really?

As with everything else this holiday is more and more commercialized every year though I'm debating whether or not it's completely bad. Did you know that you can print out VIP Passes to see Santa at The Lehigh Valley Mall? Indeed you may. No more waiting in the long line; instead preorder your photo package and bring your pass and go straight to the front of the line...or at least the VIP line. Let us pray that your little one even WANTS their photo taken that day otherwise who knows if they offer refunds or rainchecks. Even a simple trip to Santa now requires you to hop on the computer because you know when you get there and the line's a mile long you'll wish you had a pass. Is all that extra hoopla a good thing or does it take away from the magic of the season. Kids waiting in line in anticipation while they rehearse their speeches and clutch their letters for the big guy. Now you have mom and dad and the pass heading to the line so you can get in and out. It does help when you have a little one who may not be in the same frame of mind after waiting but eventually everyone will have the passes and they'll need another idea to help speed things along. Personally I just go to obscure malls where typically there are 4 or 5 people in line. Where is that you may ask? I'm not telling. ;)

So when DOES the big guy arrive? Santa's Photo Shop officially opens at The Lehigh Valley Mall on Friday, November 12th at 6:30pm. If you plan to go, don't forget to look into that "Fast Pass".

Celebrate the holidays 'Down Under' style at The Crayola Factory

The holiday fun begins tomorrow at The Crayola Factory in Easton! The theme until January 2nd, 2011 will be The Gingerbread Man and he's spending the Holidays in Australia!! Crayola Factory will be transformed into an Australian Holiday Wonderland and while there are some familiar traditions you'll learn how the land down under celebrates things in a bit of a different way.
